THE ROLE
The Bentleys Hotel is looking for an experienced Head Chef to lead our busy kitchen to continued success
We are searching for someone who is passionate about all things local and cooking honest pub grub.
Someone who understands the importance of fresh and quality ingredients and an eye for detail.
Leadership, strong communication skills, effective time management and the ability to work well with everyone are paramount.
The Head Chef is a key leadership role at the hotel and is vital to the venue's growth and success.
We are looking for someone who is enthusiastic, community-minded and has a positive 'can-do' attitude.This is an opportunity for a Head Chef who will embrace our brand of Homegrown Heroes and inspire a team.
In managing the kitchen operations, you will lead by example with a hands-on approach, ensuring service runs efficiently and effectively with meals delivered to an exceptional standard.
The ideal candidate will have experience running a kitchen and a real drive for creating fresh seasonal food, show flair and embrace creativity.
The successful candidate will have the flexibility to work across a 7-day roster and public holidays as required.
Oversee all kitchen operations reporting to the Venue Manager
Deliver to our client's high expectation of a premium experience
Ability to manage, coordinate, and lead the kitchen through busy and successful service periods and functions
Maintain an overall knowledge and passion for food and current trends
Taking responsibility for food production and versatility to lead teams across all operations where required
Tightly monitor costs with special regard to portion control, waste minimization, and stock control with support from the Venue Manager and Head Office
Observation of and implementation of allergy awareness controls
Adhering to all relevant WHS law and food safety standards
Be an integral part of our passionate leadership team who is dedicated to creating memorable experiences
Engagement with and responsibility for all aspects of human resources within the kitchen (recruitment, rostering, training, performance) in coordination with the Venue Manager and People and Culture
Responsibility for supporting existing apprentices and encouraging new ones
Maintaining a premium and consistent approach to all levels of food and service delivery.

Trade qualified Chef (essential)
A team player who leads by example
Able to work autonomously and under pressure whilst maintaining a positive outlook and professional manner
Prior experience in a fast-paced and high-quality kitchen
Modern, contemporary, and innovative culinary skills
Strong knowledge of ethical people and performance management
Be motivated by a passion for quality and great service delivery
Solid knowledge of food and catering trends with a focus on quality, technique, sanitation, food cost controls, and presentation
High levels of experience in scheduling, managing, mentoring, and training staff
Ability to communicate effectively with a wide range of people (suppliers, customers, employees, and management)
Have the ability to work under pressure and to tight deadlines in a calm and methodical manner
