About the Role:
We are seeking an experienced and dynamic Sous Chef to join our team and play a pivotal role in delivering exceptional culinary experiences across our aged care facilities. This is a hands-on leadership role where you will assist in leading the kitchen team, manage daily food operations, and ensure consistently high-quality meals for residents.
Key Responsibilities:
* Lead and supervise all kitchen operations, ensuring excellence in food quality, presentation, and service.
* Plan, organise, and oversee food preparation for daily service, bulk cooking, and banquet functions.
* Assist in menu planning and development, ensuring meals are nutritious, appealing, and tailored to resident needs.
* Manage stock control, ordering, and operational budgets while minimizing waste.
* Mentor and coach kitchen teams, ensuring staff training, performance management, and compliance.
* Maintain strict adherence to food safety, health, and safety legislation, ensuring accreditation standards are met.
* Engage with residents and staff to obtain feedback and ensure exceptional dining experiences.
* Ensure all kitchen documentation, processes, and policies are current and compliant with aged care standards.
Person Specifications: Skills, Knowledge & Attributes
Essential:
* Minimum 3 years' experience as a Sous Chef or similar role.
* Relevant trade qualification and Food Safety Supervisor Certificate.
* Experience in developing and implementing HACCP/Food Safety Plans.
* Proven experience supervising and managing teams.
* Knowledge of Work Health & Safety systems, duty of care, safe operation of plant equipment, and manual handling.
* Proficient in budgeting, cost tracking, and cost control.
* Proficient in Microsoft Word, Excel, and Office Suite.
* Well-developed communication skills and high self-awareness.
* Effective time management and organisational skills.
* Ability to work independently with self-motivation.
Desirable:
* Experience within the aged care industry.
* At least eight years' experience as a Chef within hospitality, catering, or health sectors.
