Job Description
We are posting on behalf of our client Galati Group (Galati Nominees Pty Ltd) for the role of Butcher / Knife Hand. The role is within our Mad Butcher meat facility. As a Butcher/Knife Hand you will be a skilled and experienced butchers with expertise in meat processing and preparation, ensuring the production of high-quality meat products.
Tasks & Duties
- Cutting & Trimming Standards:
- Adhering to cutting specifications provided by management.
- Skillfully cutting, trimming, and portioning meat according to specifications and customer requirements.
- Maximising profit and minimising loss through efficient trimming techniques.
- Ensuring a quality product is provided with correct placement for maximising productivity and packaging standards.
- Team Participation
- Leading by example and motivating the team to achieve the best results possible.
- Maintaining a harmonious work environment to enhance productivity.
- Collaborating with other team members to prioritise workloads and act on opportunities throughout the shift.
- Assisting in training and developing new team members as required.
- Product Presentation and Stock Control
- Ensuring cleanliness of your work area is of a high standard at all times.
- Ensuring the quality of the produced products meets standards.
- Fulfilling all orders within the designated timeframe.
- Following stock control procedures, such as FIFO principle or specific instructions.
- Customer Service
- Ensure a quality service is provided for all customer requests and orders.
- Adherence to Health and Safety Guidelines
- Ensuring personal and team safety by following correct procedures and techniques.
- Maintaining and ensuring the safety of equipment used by the team.
- Following HACCP Food Safety protocols, including accurate monitoring, recording, and reporting.
- Using appropriate personal protective equipment (PPE) and keeping it clean and in good condition.
- Using mesh gloves or cut-proof gloves when handling knives.
- Operating machinery according to standard operating procedures (SOP).
- Inspecting machinery before use and reporting any unsafe equipment to management immediately.
- Keeping work areas clear and accessible, including entries, exits, and fire equipment.
- Reporting incidents and completing required documentation on time.
- Compliance
- Following all policies and procedures related to meat processing within the factory.
- Ensuring legal requirements related to meat processing are met.
- Following and maintaining production systems and processes in a timely manner.
- Communication
- Collaborating and communicating effectively with team members and supervisors.
- Providing updates and reporting any issues promptly.
- Maintaining open and transparent communication with colleagues.
Skills and Experience
- Strong knowledge of meat cuts, trimming techniques, and portion control.
- Familiarity with meat processing equipment and ability to operate and maintain them effectively.
- Ability to work in a fast-paced environment and handle multiple tasks simultaneously.
- Attention to detail and strong organisational skills to ensure accurate and efficient work.
- Excellent communication and teamwork skills to collaborate with other team members.
- Physical stamina and strength to lift heavy cuts of meat and stand for long periods.
- Flexibility to work weekends, holidays, and overtime as needed.
- Knowledge of hygiene and safety regulations related to meat processing.
- Butchery certifications and/or Knife Hand skills.

Salary: from $76,515 to $85,000 per annum
