Chef de Partie
Job purpose:
The purpose of the Chef de Partie role is to support Senior Sous Chef, Sous Chef and Junior Sous Chef level to lead and manage parts of the kitchen brigade in particular the casual workforce in order to analyse, produce and implement improvements to the food standards quality for the business, in particular but not limited to Functions & Events.
The role works with the kitchen management to deliver the overall operation of the Kitchen including the production and service for all corporate external catering and the food quality across all function rooms, suites, boxes and external events. Accountable to the Executive Chef for the financial, operational, food quality and customer service performance of kitchen services program.
In this role you will:
* To assist the F&B team in delivering catering across multiple restaurants, function rooms and outlets on major event days and for banquets on non-major event days.
* Planning a dietary matrix with suitable substitutions
* Create market lists for ordering
* Create accurate recipes for the preparation of the dishes
* Delivery of the dishes
* Training of other culinary team members and wait staff to be knowledgeable about contents of dishes
* Adding value to the day-to-day operation of the stadium
* Assisting our position as 'the most beautiful Stadium in the world.'
To be successful, you will have:
* A Chef qualification (Commercial Cookery) with a Diploma in Hospitality Management preferred
* 3 years relevant industry experience in a similar role
* Passionate about modern food trends and culinary techniques and skilled in demonstrating them
* HACCP knowledge and exposure
* Outstanding communication skills, within and across multiple departments, understanding the needs and requirements of the business to provide a "Fans First" Environment.
* Sound Microsoft skills, ability to understand excel, and use email.
While the standard working hours are 8:30am to 5:00pm, the nature of the event industry means you will be required to work outside these hours, especially during events held at Optus Stadium and Stadium Park.
