Position Summary
The Breakfast Commis / Demi Chef supports the smooth daily operation of the hotel breakfast service at Magma by Dany Karam. This role focuses on consistent execution, efficient preparation, and high standards of food quality and presentation for buffet and à la carte breakfast offerings.
Working under the direction of the Breakfast Sous Chef or Head Chef, the role requires early starts, strong organisation, and a team-focused mindset to deliver a polished hotel breakfast experience for guests.
Key Responsibilities
Breakfast Service Operations
Assist in the preparation and service of buffet and à la carte breakfast items
Execute breakfast dishes to Magma's standards, ensuring consistency and quality
Maintain timely replenishment of buffet items during service
Support live cooking stations where required (eggs, grill, pancakes)
Ensure food is presented attractively and held at correct temperatures
Preparation & Mise en Place
Prepare daily mise en place for breakfast service, including hot and cold items
Assist with basic butchery, vegetable preparation, sauces, and batters
Follow prep lists accurately and complete tasks within required timeframes
Assist with post-service breakdown and preparation for the following day
Hygiene, Food Safety & WHS
Maintain strict food safety, hygiene, and cleanliness standards at all times
Ensure correct food storage, labelling, and stock rotation (FIFO)
Follow WHS procedures, including safe knife handling and equipment use
Participate in cleaning schedules and section maintenance
Teamwork & Communication
Work cooperatively with kitchen and front-of-house breakfast teams
Follow instructions from senior chefs clearly and efficiently
Communicate stock shortages, equipment issues, or quality concerns promptly
Maintain a professional, respectful, and positive attitude during early-morning service
Skills & Experience Required
Previous experience in a hotel or restaurant kitchen preferred
Basic understanding of breakfast cookery and service flow
Ability to work early morning shifts reliably
Good knife skills and basic kitchen techniques
Ability to work efficiently in a fast-paced environment
Strong attention to detail and cleanliness
