Gurung Australia Pty Ltd t/a Gurkhas Himalayan Nepalese Restaurant is seeking passionate and experienced Chef & Cook at 71-75 Lake Street, Cairns QLD 4870. The restaurant serves authentic taste of the Himalayan Kingdom of Nepal. Gurkhas is one of the most famous Nepalese Restaurants in Queensland serving the same taste of Himalayan cuisine with an added smile.
Chef
Duties/Job descriptions but not exhaustive:
* Develops menus, estimates food and labour costs, and manages the ordering of ingredients and supplies.
* Organises and oversees the planning, preparation, and cooking of food in a restaurant or catering environment.
* Ensures high standards through quality control, including tasting dishes and confirming proper presentation before service.
* Liaises with managers, dietitians, kitchen staff, and front-of-house teams to address food preparation and service requirements.
* Demonstrates cooking methods and provides guidance on correct culinary techniques and procedures.
* Prepares, cooks, and presents authentic Nepali and Indian cuisine.
* Implements and enforces food safety and hygiene regulations.
* Selects, trains, supervises, and supports kitchen staff.
* Manages food storage, freezing, and preservation processes.
* Sets a clear culinary direction, motivates the team, and delegates responsibilities efficiently.
* Recruits, leads, and manages staff performance.
* Overseas daily kitchen operations, including inventory control, ordering, and budgeting.
* Maintains strict standards of cleanliness and hygiene within the kitchen.
* Performs all additional duties expected of a professional chef.
Skills and experience for Chef:
* Minimum 1-year relevant work experience.
* At least Certificate IV in Commercial Cookery or Kitchen management (or higher).
* Knowledge of Food Hygiene and OH&S Standards.
* Ability to work closely with management to ensure consistent high-quality service is provided.
* Basic knowledge of Indian and Nepali dishes is desired.
Cook
Duties/Job descriptions but not exhaustive:
* Prepare, season, and cook a wide range of traditional Nepali & Indian dishes based on recipes.
* Observe and test foods to determine if they have been cooked sufficiently, using methods such as tasting, smelling, or piercing them with utensils.
* Weigh, measure, and mix ingredients according to recipes or personal judgment, using various kitchen utensils and equipment.
* Coordinates, supervises and collaborates with kitchen staff in food preparation and cooking.
* Bake, roast, boil, and steam meat, fish, vegetables, and other foods.
* Wash, peel, cut, and seed fruits and vegetables to prepare them for consumption.
* Regulate temperature of ovens, broilers, grills, and roasters.
* Inspect food preparation and serving areas to ensure observance of safe, sanitary food‐handling practices.
* Examine foodstuffs to ensure quality.
* Store food in temperature‐controlled facilities.
* Portion and plate meals accurately, adding gravies, chutneys, sauces, and garnishes where appropriate.
* Preparing food to meet special dietary requirements.
* Assists senior team in development of new recipes and menu items for specials.
* Estimate food consumption and assist with ordering supplies or sourcing ingredients from storage.
* As required in a position as cook.
Skills and experience for Cook
