The opportunity
We are currently looking for a site-based Sous Chef to join the team at our Duketon operation.
Reporting to the Head Chef, you will support in leading kitchen operations, ensuring the delivery of high-quality, safe, and nutritious meals. The Sous Chef is responsible for supervising kitchen staff, maintaining food safety and hygiene standards, managing stock and supplies, and contributing to menu planning, quality control, and staff development.
This is a site-based role working on a FIFO 2:1 days only roster.
The Main Responsibilities Of This Role Include
4. Supervise and coordinate daily activities of chefs and kitchen utilities, ensuring effective teamwork and high standards of performance
5. Act as the main point of contact for kitchen queries, operational issues, and staff support in the absence of the Head Chef
6. Ensure all staff comply with policies, procedures, PPE, and uniform requirements
7. Conduct morning prestart meetings and provide ongoing staff training and mentoring for new chefs and kitchen utilities
8. Assist the Head Chef in employee performance evaluations and ongoing staff development
9. Monitor and maintain food safety records, including temperature logs, allergen books, cleaning schedules, and monthly checklists
10. Ensure the kitchen always meets government health and safety regulations and company sanitation policies
11. Oversee the safe use and handling of chemicals and cleaning products, following SDS and site procedures
12. Liaise with independent food auditors, local council food inspectors, pest inspectors, and third-party cleaning and maintenance companies as required
13. Monitor kitchen stores and stock levels, including chemicals, cleaning products, disposables, and food supplies
14. Assist the Head Chef in maintaining food budgets, cost control, and labour management
15. Complete kitchen food and equipment orders as required
16. Collaborate with the Head Chef on menu planning and the development of cycle menus

18. Demonstrated experience in a supervisory role, working in remote accommodation
19. Kitchen certification requirements: Food safe, allergens, chemical training
