Role Overview
We're looking for an experienced Sous Chef who will assist in the overall running of the kitchen in the absence of the Head Chef. You will be an integral part of the kitchen operations and day‑to‑day planning of service.
Responsibilities
* Assist with stock control and ordering, overseeing preparation, cooking and presentation to ensure the highest service standards.
* Train and mentor junior chefs and other kitchen staff.
* Ensure the kitchen remains compliant with all food, health and safety regulations.
* Maintain kitchen organization from open to close, especially during service periods.
Qualifications
* Proven experience in Japanese / Asian cuisine.
* Excellent time management, leadership and ability to work under pressure.
* Experience supervising a team in the absence of management.
* Ordering and stocktaking experience, managing budgets and COGS.
* Relevant qualifications in commercial cookery and food safety.
* Growth mindset with a team‑first mentality.
