Hamilton Island is seeking a creative and experienced Head Chef to lead the vibrant team at coca chu, our iconic beachfront restaurant overlooking Catseye Beach. With a playful menu inspired by the hawker-style street food of Southeast Asia, coca chu combines bold Asian flavours with an Aussie twist to create an unforgettable dining experience.

Your Role
As Head Chef at coca chu, you’ll lead a passionate kitchen team in a high-volume, fast-paced environment. You’ll oversee menu execution, uphold quality standards, and bring the restaurant’s vibrant vision to life through innovative dishes and exceptional guest experiences.
Where You’ll Make an Impact
- Manage daily kitchen operations, staffing, and food safety compliance.
- Lead, mentor, and develop a team of dedicated chefs.
- Collaborate with the Executive Chef to evolve and elevate coca chu’s offering.
- Maintain a strong focus on flavour, quality, consistency, and presentation.
- Ensure seamless delivery of high-volume service while preserving creativity and fun.
What We’re Looking For
You’re a confident leader and creative culinary professional with a flair for bold flavours and a passion for team leadership. You thrive in quick-paced, high-end kitchens and love crafting dishes that surprise and delight.
To Be Successful, You Will Need:
- Certificate III in Commercial Cookery (Essential).
- Food Safety Supervisor Certification (Essential).
- Minimum 4–5 years’ experience in a Sous Chef or Head Chef role.
- Strong leadership and team management skills.
- Experience with Asian Hawker-style cuisine (Highly desirable).
- Excellent organisation, communication, and interpersonal skills.
- Flexible, positive, and reliable attitude.
- Impeccable grooming and personal presentation.
