Bistro Sociale is a premier culinary destination nestled within the walls of the stunning, boutique Berida Hotel in Bowral. A long-standing favourite for locals and visitors alike, our 80-seat establishment is steeped in history and refined European charm. Known for its warm hospitality, crackling fireplaces, and a commitment to seasonal, locally-sourced produce, the Bistro is a cornerstone of the Southern Highlands dining scene.
We pride ourselves on delivering an exceptional guest experience that feels both indulgent and authentic, operating 7 days for dinner and providing a sought-after lunch service from Friday through Sunday. We are currently entering an exciting new chapter and are seeking visionary culinary leaders — an Executive/Head Chef to drive our kitchen team toward continued excellence.

THE ROLE
We are seeking a visionary and passionate Head Chef / Executive Chef to lead the culinary heart of our well-regarded restaurant and bar at Berida Hotel. This is a senior leadership position designed for a professional who leads from the front with an ownership mindset and a dedication to taking the business to the highest levels of regional excellence.
Reporting directly to the owner, you will be responsible for the strategic and operational success of all food departments, including our Bistro, Bar, and Conference & Function facilities. We are looking for a leader with an upbeat, progressive mindset, an excellent work ethic, and the professional drive to make a lasting mark on this iconic Southern Highlands business.
Key Responsibilities:
Culinary Vision & Strategy: Drive continual business growth through creative menu design, ensuring all offerings—from seasonal bistro menus and weekly specials to high-end function catering—reflect current food trends and maintain our premium reputation. This includes strategic planning and execution of a new high-profile opening
Operational Excellence: Facilitate smooth operations across all departments, implementing and refining kitchen systems for maximum efficiency and consistency. COGs and Labour management, Stock control, ordering, deliveries, wastage and invoices
Team Leadership: Cultivate a high-performing kitchen culture, overseeing staff training, development, and recruitment to ensure a professional and motivated brigade.
Executive Management: Manage all aspects of the Head Chef role, including food costing, supplier relationships, inventory management, strict adherence to HACCP and safety protocols, and WHS compliance.
Collaboration: Work closely with the owner on a weekly basis to approve draft menus and align the culinary direction with the overall business objectives of the hotel and bistro.
SKILLS AND EXPERIENCE
· Minimum of 5 years' experience in a similar Exec level role
· Experience with a high quality, high volume modern Australian offering
· A hands-on leader and Chef
· A highly skilled Chef who is up to speed on current trends
· Positive leadership and team development
· Energetic, enthusiastic and fun with excellent verbal and written communication skills
· Ability to work under pressure and deliver when the time counts
· Attention to detail and ability to maintain quality and consistency
· A passion for hospitality and a love of providing the best
· Thorough understanding of operational costs and COGs
· Maintain a superior standard of food hygiene and safe kitchen working conditions
· Superior standards of cleanliness
· Genuine desire to live and work in the vibrant Southern Highlands Region
· WHS and HACCP compliant
· Food Safety Certificate
· Covid Safe Practice Management experience
