Responsibilities
Planning, Organising and Managing Bar Operations
* Planning and organising the full range and mix of beverage products, cocktail offerings, stock levels and service standards in accordance with business goals and customer expectations.
* Leading the strategic and collaborative development of the cocktail menu, from initial research and development through to rollout.
* Managing all elements of the bar service period, actively overseeing bar operations and ensuring a high-quality, industry-leading guest experience.
* Ensuring the bar is consistently prepared and fully stocked through effective stock control, ordering, supplier coordination and operational planning.
Promotion and Sales of Goods and Services
* Promoting and selling bar products through service excellence, staff product knowledge, menu innovation and guest engagement.
* Building and nurturing strong relationships with regular and new guests to create memorable guest experiences that encourage repeat bookings.
* Developing strong and productive relationships with producers, importers and distributors to ensure access to high-quality beverage offerings and consistent supply.
Compliance with Liquor, Health, Safety and Company Regulations
* Ensuring full compliance with liquor licensing obligations, responsible service of alcohol (RSA) requirements, workplace health & safety standards, and all relevant laws and regulations.
* Upholding and enforcing all company policies, procedures and brand values across the bar department.
Staff Supervision, Training and Leadership
* Leading the selection, recruitment, onboarding, scheduling, training, motivation and supervision of bar and service staff.
* Providing mentoring and ongoing training, including tastings and education sessions, to ensure staff maintain exceptional product knowledge and service standards.
* Executing team‑building activities and fostering a collaborative, positive and performance‑driven workplace culture.
* Leading the bar team through operational tasks, coaching, performance support and continuous improvement initiatives.
Financial Management, Purchasing and Cost Control
* Overseeing stock management, purchasing, inventory control, budgeting and pricing strategies to ensure cost efficiency and profitability.
* Monitoring financial performance, minimising wastage, managing supplier agreements and contributing to operational budgeting processes.
Development and Review of Operational Policies and Procedures
* Developing, reviewing and implementing bar operational policies, training programmes, customer service standards and internal procedures to support consistent service quality.
* Working collaboratively with other Bar Managers and senior management to enhance operational efficiency, service innovation and workplace culture.
Stakeholder & Client Relationship Management
* Acting as the primary point of contact for internal stakeholders and external clients relating to the bar department.
* Coordinating with suppliers, event organisers, internal departments and management to ensure smooth operation and alignment with business priorities.
Qualifications/Experience
* Minimum 2-3 years' experience in a senior bar or venue management role within a premium restaurant, bar, or hotel
* Confident running shifts and leading a team from the front
* Strong leadership skills and a hands‑on, team‑first attitude
* Punctual, reliable, and solutions‑focused under pressure
* RSA and RCG certified
* Full Australian working rights
* A commitment to the further development of your skills and experience as a beverage professional, with personalised mentorship and support from Trader House Beverage Director Leanne Altmann
* Involvement in future planning and the execution of special events and collaborations
