Youwill of course be passionate about service, with an exceptional workingknowledge of restaurant operations and order of service; along with a deepappreciation of quality wines and cocktails in order to confidently match and enhancetheir overall dining experience.
RESPONSIBILITIES
1. Lead and manage theday-to-day signature restaurant operation, focusing on beverage and bar services in theHotel while maximizing profitability and meeting customer’s needs.
2. Manage the Restaurant's beverage serviceto a consistently high standard, creating memorable dining experiences for ourguests.
3. Develop operational policies and procedures.
4. Ensure proper cleaning andmaintenance of all beverage and work areas, tableware, utensils and othermaterials and equipment.
5. Assist in the preparation of monthlyrestaurant beverage and bar reports and forecasts, commenting on keyperformance indicators and develop action plans to keep on target in terms ofprofitability goals.
6. Be knowledgeable of and operatewithin appropriate outlet and Hotel liquor licensing guidelines and management policies.
7. Maintain currency of RSAcertification, amendments and updates and adhere to RSA principles.
8. Establish on-going “on job” training programswithin the department to meet Brand and service standards.
9. Effectively use results of Guest feedbackto improve product and service delivery.
10. Adhere to the performance reviewsystem; ensuring frontline performance reviews are conducted for probationaryand annual schedules and correct performance issues and counsel as required.
11. Ensure all OH&S requirements andtraining are adhered to and ensure all health or safety hazards or incidentsare reported in a timely manner. Hazards may include unsafe working conditions,equipment and machinery faults or damage, and other housekeeping or maintenanceneeds.
12. Maintain standards of hygiene forfood handling as prescribed by legislative regulations.
13. Ensure your team is fully conversantwith departmental fire and evacuation procedures.
EXPERIENCE

14. Experience with POS systems and MicrosoftOffice Suite.

16. Possess financial acumen andunderstand the process of achieving budgeted profit by driving revenue andmonitoring labor costs.
17. Knowledge and experience with foodsafety and safe work practices and legislation.
18. Experience with effective purchasingand stock control.
19. Have a passion for deliveringexceptional dining experiences and know it’s so much more than just a plateddish or a drink in a glass!
20. Impeccable grooming and presentation.
21. Excellent time management skills andthe ability to adapt and personalize guest experiences.
22. Excellent problem-solving skills withthe ability to keep calm under pressure.
