**We currently have an exciting opportunity for an ASSISTANT WINEMAKER to join our fun and hard-working team prior to the 2025 vintage on the stunning South Coast of NSW.**

Cupitt’s Estate is a proudly family-owned boutique winery, brewery, fromagerie, cellar door and restaurant on the beautiful NSW South Coast between coastal towns of Milton, Mollymook and Ulladulla.

Our winery sources fruit from multiple regions within Southern NSW, focusing on emerging varieties and a few established varieties. Varieties processed include Nebbiolo, Sangiovese, Montepulciano, Shiraz, Pinot Noir, Viognier, Marsanne, Rousanne, Vermentino, Fiano, Albarino, Riesling, Chardonnay, Sauvignon Blanc and Pinot Grigio. The total volume is around 100-120 tonne per year with successful applicants working directly with the winemaker in all aspects of the winemaking process.

**About this Opportunity**

With work expected to commence in January/February 2025, we are seeking applicants for an Assistant Winemaker to start work prior to the 2025 vintage, with an prospect to continue on in the role in a long term position. A perfect role for a graduate winemaker looking to gain experience in all aspects of winemaking with a large number of varieties and styles.

**Assistant Winemaker Role**:

- Ensure quality parameters are adhered to from harvest to bottling.
- Ensure all winemaking procedures are carried out in a way that optimises quality and efficiency according to site policies and procedures.
- Maintain winemaking notes and record keeping to ensure compliance to relevant legislation and winery policies/procedures
- Carry out quality assurance protocols for the winery, includes laboratory and sensory analysis and quality assurance record keeping
- Assist Head Winemaker in management and supervision of vintage cellar hand staff throughout vintage
- Assist Head Winemaker in the end-to-end winemaking process - including grape receival and analysis, crush pad operations, fermentation operations/monitoring, tank and barrel operations/monitoring, transfers, racking, additions, clarification and filtration
- Undertake and supervise bottling operations
- Inventory stock management
- Help develop technical wine notes
- Represent winery at industry/trade/client tastings/visits as required
- Represent the company at staff events and workshops as required
- Help develop and maintain social media content for winery
- Help manage and drive compliance in OH&S;, Quality, management systems and process improvements

**Skills, Qualifications & Experience**:

- Experience in wine vintage or winery work.
- Bachelor degree or equivalent knowledge gained through winemaking experience
- Proven ability to work in a small team of staff carrying out multiple parts of the vintage process
- Strong teamwork and excellent communication skills
- A commitment to working safety
- Willing and able to work shift work and on weekends during vintage
- Ability to stand on your feet for long periods of time and be fit to perform physical tasks
- Possess a current forklift licence, or looking to get one before February 2025.
- Self-motivated with initiative and the ability to problem-solve
- Good sense of humor
- Excellent time management capabilities
- Attention to detail is essential
- Driver’s Licence and own reliable transport is essential as no Public Transport is available
- The right to live and work in Australia

Pay: From $55,000.00 per year
