• We are currently seeking a talented and experienced • Sous Chef• to support our kitchen team at • Parklands Resort Mudgee•. As the Sous Chef, you will play a pivotal role in maintaining our culinary standards and delivering exceptional dining experiences to our guests.

• About The Role
• Experience in a bustling, food-focused setting is highly preferred. This role requires proficiency in people management, KPIs, food and wage cost analysis, and staying up to date with current food trends.
• Key responsibilities include:
• Executing seasonal menus that align with the restaurant's concept and standards.
• Working closely with Head Chef with tastings of all menus with the kitchen and service teams prior to implementation.
• Ensuring kitchen staff are well-versed in menu items, preparation methods, and presentation.
• Controlling food portioning and rotation to maintain cost efficiency and compliance with food safety regulations.
• Cultivating strong relationships within the kitchen brigade and F&B service team.
• Responsible for kitchen labour costs and rostering to optimize profitability.
• Responsible for food procurement and inventory management to ensure quality and cost-effectiveness.
• Organizing and maintaining kitchen storage areas for efficiency and cleanliness.
• Ensure compliance with health and safety regulations and food hygiene standards.
• About You
• We are seeking a dynamic individual with:
• Previous experience as a Sous Chef/Head Chef or significant leadership experience
• A passion for culinary excellence, presentation, and guest experience.
• Strong organizational skills and attention to detail.
• Ability to thrive in a fast-paced kitchen environment.
• Dedication to team development and training, fostering a positive and creative culinary culture.
• Knowledge of relevant industry legislation and standards.
