Hecho En Mexico is a vibrant and authentic Mexican restaurant located at 95–105 Esplanade, Cairns City, bringing the flavors and energy of Mexico to Far North Queensland. Since launching in Fitzroy, Victoria, in 2013, our brand has grown across Australia thanks to our commitment to quality ingredients, bold flavors, and exceptional dining experiences. We are now seeking a qualified and passionate Chef to join our kitchen team in Cairns.
About the Role:
As a Chef at Hecho En Mexico Cairns, you will play a key role in delivering high-quality dishes that reflect our commitment to fresh, bold Mexican cuisine. You will be responsible for all aspects of food preparation, kitchen supervision, and maintaining culinary excellence in a fast-paced environment.
Key responsibilities include:
* Prepare, cook, and present authentic Mexican dishes in line with our menu and brand standards
* Ensure high levels of food quality, taste, and presentation at all times
* Collaborate with the management team to plan seasonal specials menu
* Supervise and support kitchen staff, ensuring smooth day-to-day operations
* Manage kitchen inventory, ordering supplies and controlling food costs
* Maintain hygiene, safety, and cleanliness in line with industry regulations
* Monitor and minimise food waste through efficient kitchen practices
* Work under pressure during peak hours while maintaining attention to detail
* Assist with training junior staff and ensuring consistent standards across the kitchen
Skills and Experience Required:
To be successful in this role, you will need:
* Certificate IV in Commercial Cookery or equivalent (or 3+ years of full-time chef experience)
* Candidates without formal culinary qualifications must have 3+ years of full-time chef experience in any restaurant cooking environment
* Minimum 3 years of recent full-time experience working as a Chef
* Strong understanding of Mexican cuisine or a passion for learning it
* Prior experience with Mexican cuisine is preferred but we are flexible for candidates with transferable culinary skills
* Proven ability to manage kitchen operations in a fast-paced hospitality environment
* Excellent knowledge of food hygiene and kitchen safety standards
* Team leadership skills and a commitment to collaboration
* Strong time management and the ability to multitask during busy service periods
* A passion for quality, presentation, and culinary creativity
Job Details:
* Job Type: Full-time, Permanent
* Salary: $78,000.00
* Location: On-site at Hecho En Mexico Cairns
* Schedule: Rotating roster, including weekends and public holidays
* Work Authorisation: Must have the right to work in Australia
* Expected Start Date: ASAP
