Sous Chef – A Hereford Beefstouw
A Hereford Beefstouw is a premium steakhouse renowned for exceptional beef, classic technique, and refined service. We are seeking an experienced Sous Chef with strong grill experience and in-depth steak knowledge to support our Head Chef and uphold the standards our restaurant is known for.
This is a hands-on leadership role in a fast-paced, high-standard kitchen where precision, consistency, and teamwork are essential.
Key Responsibilities
* Support the Head Chef in all aspects of kitchen operations
* Lead grill and steak service with precision and consistency
* Ensure correct cooking techniques, resting, and presentation of premium cuts
* Maintain food quality, portion control, and plating standards
* Supervise and mentor kitchen staff during service and prep
* Assist with ordering, stock control, and minimising waste
* Uphold HACCP, food safety, and workplace compliance standards
* Hold a current Food Safety Supervisor certification
* Food Safety Supervisor certification must be obtained within 30 days of commencement if not already held
* Step into Head Chef responsibilities when required
About You
* Proven experience as a Sous Chef or Senior Chef in a steakhouse or grill-focused kitchen
* Minimum 1-2 years of experience as a Sous Chef or Senior Chef
* Excellent knowledge of beef cuts, ageing, cooking temperatures, and grill techniques
* Confident running a busy service and leading a team under pressure
* Strong organisational and communication skills
* Passion for quality produce and classic cooking methods
* Flexible availability including nights and weekends
* Eligibility to work in Australia with any valid work visa
