Chef de Partie – Sails Restaurant

Set right on Catseye Beach, Sails Restaurant is reopening and being reimagined with a vibrant new coastal-inspired menu which will showcase light, fresh flavours, premium local seafood, and our signature in-house made flatbread all prepared in a stunning open kitchen featuring a wood-fired oven.

Guests can even choose from a daily seafood display, with their selection cooked to perfection right before them.

We're seeking passionate and motivated Chefs de Partie to join our culinary team as we bring this exciting new chapter to life.

Your Role

As a Chef de Partie at Sails, you'll take ownership of your section, preparing and plating dishes that reflect the restaurant's focus on clean, vibrant flavours. You'll work closely with senior chefs to deliver consistency, creativity, and quality across every service.

Where you'll make an impact

* Prepare and cook dishes using premium local produce and fresh seafood.
* Operate and maintain the wood-fired oven as part of the open kitchen experience.
* Uphold presentation, portioning, and timing standards to ensure excellence in every plate.
* Support the Sous and Head Chefs in menu execution and kitchen operations.
* Contribute to a positive, professional, and supportive team culture.


What we're looking for

* Certificate III in Commercial Cookery or equivalent.
* Proven experience as a Chef de Partie or strong Demi Chef in a high-volume or premium dining environment.
* Passion for light, fresh, and produce-driven cuisine.
* Ability to work calmly and efficiently in a fast-paced, open kitchen.
* Excellent teamwork, communication, and attention to detail.

* A strong sense of pride in your craft and presentation.
* Flexibility with hours, including weekends and public holidays.
* A commitment to food safety and hygiene standards.
