The Role: Crafting Sweet Memories with Skill and Heart
We are looking for an experienced Pastrycook to join us in delivering unforgettable Hong Kong-style dim sum and exquisite desserts to our guests. At Hong Kong Chef, our handmade dim sum is crafted by award-winning cooks, featuring over 50 different options on our menu. Your role will be an essential part of this legacy, using your exceptional skills to delight our customers' taste buds.
Your key responsibilities will include:
* Prioritising Hygiene and Safety: Checking the cleanliness of equipment and operation of premises before production runs to ensure full compliance with occupational health and safety regulations, maintaining our commitment to a clean and organized workspace.
* Selecting Quality Ingredients: Checking the quality of raw materials and weighing ingredients precisely, ensuring every item is made with fresh, premium produce—a reflection of our attention to detail.
* Crafting Dough with Care: Kneading, maturing, cutting, moulding, mixing, and shaping dough and pastry goods, laying the perfect foundation for our signature dim sum and desserts—a skill passed down by our award-winning culinary team.
* Preparing Exquisite Fillings: Preparing pastry fillings, combining traditional flavours with modern creative concepts to create our range of a wide variety of taste experiences.
* Mastering the Bake: Monitoring oven temperatures and product appearance to determine precise baking times, ensuring every batch of egg tarts, puff pastries, and other delights achieves perfection.
* Creative Decoration and Presentation: Glazing buns and pastries, and decorating cakes with cream and icing, ensuring each dessert delights customers not only in flavour but also in visual appeal.
* Operating Specialised Equipment: Operating machines which roll and mould dough and cut biscuits, skillfully utilizing modern tools while maintaining the essence of traditional craftsmanship.
* Maintaining a Clean Workspace: Emptying, cleaning, and greasing baking trays, tins, and other cooking equipment, upholding our commitment to a clean and organized workspace—a cornerstone of our Regional Employer Award success.
What You Bring to the Table:
Work Experience:
A minimum of 3 years of proven experience as a Pastrycook or in a related role within a fast-paced, high-quality kitchen environment.
Skills and Capability:
* Dim Sum Expertise: Significant experience in Hong Kong-style dim sum preparation is highly regarded, particularly familiarity with the handmade techniques of classic items.
* Pastry Skills: Mastery of various doughs, pastries, and fillings, with a deep understanding of ingredients.
* Attention to Detail: A keen eye for detail and a commitment to precision, perfectly aligning with our \"Attention to Details\" philosophy.
* Creativity: A creative flair for desserts and dim sum, with the ability to contribute fresh ideas to our innovative menu.
* Team Collaboration: The ability to work harmoniously with other members of our \"big family,\" growing together in an atmosphere of mutual respect.
* Hygiene Awareness: A strong understanding of and commitment to strictly complying with food safety and occupational health regulations.
Qualifications:
A relevant culinary or pastry qualification is advantageous, but not necessary.
