Location: Seddon, VIC 3011

Employment Type: Full-time

Salary: $80,000 per annum (plus superannuation)

Schedule: Day shifts (morning and afternoon)

Work Location: On-site only

About the Role

Mona Castle Hotel is a landmark heritage property renowned for quality hospitality and memorable dining experiences. We are seeking a motivated and experienced Sous Chef to support the Head Chef in delivering high-quality food across all services while contributing to the continued growth and reputation of the hotel.

This role offers an exciting opportunity for a driven culinary professional to take ownership of daily kitchen operations, mentor staff, and play a key role in menu development within a supportive and professional environment.

Key Responsibilities

* Support the Head Chef in delivering consistent, high-quality food across breakfast lunch, dinner, and special events
* Assist with menu development, planning, and control, reflecting seasonal produce and the heritage character of the hotel
* Contribute to menu costing, pricing, and food cost control to meet financial and profitability targets
* Supervise and lead kitchen staff, maintaining high standards and a positive team culture
* Assist with staff rostering, ensuring efficient coverage and compliance with labour budgets
* Maintain effective communication with Front of House and management to ensure smooth daily operations
* Participate in reporting to owners and senior management on performance and operational matters
* Ensure full compliance with OH&S, food safety, and HACCP requirements
* Support training, mentoring, and development of kitchen staff
* Assist in achieving performance targets related to quality, cost control, and team outcomes
* Be eligible for performance-based financial incentives in addition to base salary

Skills and Experience

* Minimum 3 years' experience as a Chef or Sous Chef
* Strong leadership, organisational, and communication skills
* Proven ability to work in a high-volume, quality-focused kitchen
* Sound knowledge of food safety, HACCP, and workplace health and safety
* Qualifications
* Diploma of Hospitality Management (required)
