Overview

Melton Country Club (MCC), part of the Essendon Football Club, has a rare opportunity for an experienced Sous Chef. We are seeking a driven and highly motivated individual with at least 3-5 years of experience to join our kitchen team. This is a hands-on role where you will work closely with the Head Chef to deliver high-quality meals, maintain smooth kitchen operations, and support the overall success of the venue.

Key Responsibilities

- Support the Head Chef in the day-to-day management of the kitchen.
- Take charge of kitchen operations in the absence of the Head Chef.
- Assist with menu planning, food preparation, and service delivery.
- Manage stock levels and stock rotation, conduct stocktakes and assist with ordering.
- Ensure food safety, hygiene, and workplace health and safety standards are maintained at all times.
- Train, mentor, and support junior kitchen staff.
- Work effectively both as part of a team and independently.
- Be available and flexible to work split shifts, weekends, and public holidays as required.
- Proven capability to independently service functions from start to finish.

Skills & Experience

- Proven experience as a Sous Chef in a fast-paced kitchen environment.
- Relevant trade qualifications (Certificate III in Commercial Cookery or equivalent).
- Strong leadership skills with the ability to step confidently into a leadership role when required.
- Positive and can do attitude.
- Excellent time management, organisational, and communication skills.
- Ability to work unsupervised and under pressure.
- A genuine team player with a passion for food and hospitality.
- Hold a high regard for personal hygiene.
- Maintain strict food safety, sanitation and HACCP Standards.

Key Selection Criteria

- Proven experience as a Sous Chef in a busy kitchen environment, with the ability to prepare and present high-quality meals consistently.
- Strong knowledge of food safety standards, kitchen hygiene, and stock control, with relevant food handling and safety certifications.
- Ability to work effectively under pressure, manage multiple dockets, and maintain attention to detail during busy service periods.
- Flexibility to work across a rotating roster, including nights, weekends, and public holidays, with a robust work ethic and team-focused attitude.
