Trippas White Group (TWG) operates over 160 iconic venues, including Lee Ho Fook, Infinity by Mark Best, and the Sydney Opera House. We are now launching TJ's Po Boy's, a coastal Australian take on a Southern classic — and we're looking for a talented Sous Chef to join the opening team.
What You'll Be Doing
* Lead day-to-day kitchen operations in a fast-paced, high-quality venue
* Work closely with the Venue Manager to deliver service excellence
* Support menu development and seasonal specials
* Maintain food safety, ordering, stock control, and cost management
* Mentor junior staff and help build a strong work culture
About You
* Experienced Sous Chef or Senior CDP ready for the next step
* Strong operational understanding of high-volume service
* Passionate about seafood, coastal flavours, and modern casual dining
* Team-focused, solutions-driven, and calm under pressure
* Solid knowledge of food safety and allergens
