Key Responsibilities
* Ensure consistent delivery of high‐quality culinary standards, adhering to established recipes, specifications and mise en place across all hotel kitchens.
* Oversee food safety, hygiene and WH&S compliance, including correct food storage, preparation, rotation and cleanliness of work areas.
* Manage daily kitchen operations, including staffing, rostering, delegation, equipment upkeep and smooth service delivery across all outlets.
* Achieve financial and resource targets through effective control of food and labour costs, stock management and waste minimisation.
* Lead, train and develop kitchen teams while collaborating with Executive Chef, F&B and outlet leaders to support seamless service and exceptional guest experiences.
What You'll Bring
* 2-3 years' experience as a Sous Chef in hotels, restaurants or bistros
* A genuine passion for food and experience across all kitchen sections including the grill, pass and pans.
* Experience with menu development and creating new dishes.
* A solid understanding of kitchen financials including labour and food costs.
* Experience training, motivating and developing staff.
* Strong communication skills with the ability to adapt to the hotel's needs.
* A strong work ethic and commitment to excellence.
