The Heritage Hotel of Gladstone remains a key hospitality landmark in Gladstone regional New South Wales, blending its 1873 heritage with a modernised, guest-focused offering. Following the launch of The Stables, the group's new wedding and events venue with its own dedicated kitchen and bistro, demand has continued to scale across both sites.
To sustain this growth, the business is now recruiting full-time Cooks to join the team. These roles are essential to maintaining service quality, supporting high-volume event operations, and strengthening the group's culinary workforce.
These are full-time positions offering a salary range of AUD 70,000 to AUD 80,000 per annum plus superannuation, aligned with skills, experience, and operational capability.
SCOPE OF THE ROLE:
* Assess food items to ensure they meet quality and safety criteria.
* Control the temperatures of cooking equipment to achieve ideal cooking conditions.
* Prepare and cook a diverse range of meals following established recipes and presentation guidelines.
* Season dishes correctly during the cooking process to enhance flavour.
* Serve food in appropriate portions, ensuring an appealing presentation with sauces and garnishes.
* Store food in temperature-controlled environments to maintain freshness and prevent spoilage.
* Prepare meals that accommodate specific dietary needs and restrictions.
* Assist in designing seasonal menus that reflect customer preferences and available ingredients.
* Calculate food requirements for events and daily operations to minimise waste and ensure adequate supply.
* Monitor inventory levels of ingredients and supplies, placing orders as necessary to maintain stock.
* Train and mentor kitchen staff and apprentices on cooking techniques, food safety practices, and kitchen operations.
* Collaborate with other kitchen staff to ensure efficient workflow and timely service during busy periods.
* Experiment with new recipes and cooking techniques to continually improve the menu offerings.
TO BE CONSIDERED FOR THIS ROLE, YOU SHOULD:
* Be willing to relocate if you are interstate or in other cities.
* Be available on both days at weekends and be able to work split shifts.
* Certificates III & IV in Commercial Cookery
* Have at least 2 years of work experience as a Cook
* Ability to work in a facts paced team.
* Excellent communication skills.
