Ten Minutes by Tractor is a premium winery, cellar door and fine dining restaurant in Main Ridge. We are known for our award winning wines, exceptional produce driven menus and a guest experience that is thoughtful, polished and deeply connected to our region.
We are seeking an experienced Restaurant Manager to lead our front of house team and deliver a world class dining experience. This role is ideal for a hospitality professional who thrives in a high performance environment, values genuine guest connection and enjoys working closely with a passionate culinary and wine team.
About the Role
As Restaurant Manager, you will oversee all aspects of the restaurant's daily operations, ensuring seamless service and consistently high standards. You will work closely with the Head Chef and Head Sommelier to plan menus and pairings, coordinate service, manage staff and uphold the quality and professionalism that define Ten Minutes by Tractor.
This is a hands on leadership role suited to someone who leads by example, communicates with clarity and warmth, and brings a calm, organised presence to service.

You will be an experienced hospitality professional with a strong background in premium or fine dining environments. You lead with confidence and warmth, stay calm under pressure, and bring a genuine passion for food, wine and exceptional service. You communicate clearly, support your team to perform at their best, and take pride in creating memorable guest experiences.
Key Responsibilities
* Lead the FOH team to deliver exceptional fine dining service
* Induct, train and supervise all FOH team members
* Oversee daily service, reservations and guest flow
* Collaborate with the Head Chef on menu planning and seasonal updates
* Respond to guest feedback and ensure a consistently outstanding experience
* Plan and organise special events and private dining functions
* Prepare and manage staff rosters
* Work with a highly respected culinary and wine team

What We're Looking For
* Minimum 3 years' experience in fine dining restaurant management
* Strong leadership and communication skills
* A calm, organised and proactive approach to service
* A passion for food, wine and delivering memorable guest experiences
* Strong understanding of premium service standards
* WSET Level 2 or higher (preferred)
* Experience working collaboratively with a kitchen team
