BAR SUPERVISOR | BARRAGUNDA
Barragunda Dining is a 40 seat farm-to-table restaurant set in the countryside of the Mornington Peninsula, sitting on 1000 acres of land & surrounded by our large orchard, vegetable garden, Black Angus beef & willtipol Lamb.
We cook with the seasons, work closely with local producers, and value hospitality that feels thoughtful, generous, and human.
Our bar program is produce-led and closely connected to the kitchen, with cocktails evolving around what we grow, forage, and preserve.
We are looking for a Bar Supervisor with both creative instinct and strong organisational skills. Someone who enjoys building a bar program from the ground up and keeping it running smoothly.
You will lead and develop the bar offering, working closely with the kitchen to create cocktails, non-alcoholic drinks, and house ferments that reflect the seasons and our landscape.
Key responsibilities include:
* Creating seasonal cocktails inspired by orchard and garden produce
* Developing and maintaining house-made drinks such as kombuchas and ferments
* Working collaboratively with the kitchen
* Creating and maintaining clear cocktail specs and recipe spreadsheets
* Managing stocktakes, ordering, and cost awareness
* Supervising bar service during service periods and setting standards
ABOUT YOU
* Proven experience in cocktail bars or restaurant bars
* Strong understanding of classic techniques with a seasonal, produce-led mindset
* Experience with fermentations is a plus (kombucha, shrubs, cordials, or similar)
* Being organised & comfortable with spreadsheets, stock control, and systems
* Calm, reliable, and able to lead by example
* Curious, thoughtful, and happy to adapt based on what's available
