VENUE MANAGER
High-volume steakhouse & late-night bar | Surfers Paradise, QLD
Full Time | Immediate Start | $90,000-$100,000 + Super + Bonus
Open Pantry Co. is proud to be working with the Rowdy Ranch Steakhouse team to fill this role. This is a build role, not a caretaker role. The venue has strong revenue momentum and a concept that is working. What it needs now is an experienced operator to install the structure, lead the team, and drive performance.
THE VENUE
A country-themed steakhouse and late-night bar in the heart of Surfers Paradise. The concept is landing; now it needs the operational infrastructure to match.
WHAT YOU'LL OWN
- Full operational leadership across FOH, bar, and kitchen
- Weekly P&L review, labour management, and cost control
- Team structure — position descriptions, onboarding, and performance reviews
- Service standards and SOPs across both the dining and late-night models
- Clear, regular reporting to ownership on trading performance and team health
ABOUT YOU
- Proven Venue Manager or Senior Operations Manager experience in a high-volume venue — $5M+ annual revenue preferred
- Late-night, bar-forward, or entertainment venue experience — you understand the dual dining and nightlife model
- Financial literacy — comfortable reading a P&L, managing labour percentages, and driving cost control
- A track record of building operational structure, not just maintaining it
- Queensland RSA and Food Safety Supervisor certification (or willingness to obtain)
THE PACKAGE
Base Salary: $90,000 - $100,000 commensurate with experience
Superannuation: 11.5% on top of base
Performance Bonus: Available for strong commercial performers — details at offer stage
Start Date: Immediate
