Cutting and preparation of various meat cuts to produce premium quality smallgoods and cooked meats.
Boning - Removing bones from pork legs, lamb legs & beef as required ensuring waste minimization
Loading and unloading of vacuum tumblers.
Forming and preparation of various pork, beef, lamb and chicken products for the cooking process.
Washing down of all equipment each day in keeping with GMP and quality system requirements.
General assistance with all reasonable duties within the business if required.
Responsibilities and Requirements
Skills and Experience Required:
* Minimum 2 years' experience as a butcher or in meat processing
* Experience with smallgoods production and meat preparation techniques
* Knowledge of different cuts of beef, pork, lamb and chicken
* Must have unrestricted right to work in Australia
* Ability to pass pre-employment medical and background checks
Physical Requirements
* Ability to lift up to 25kg regularly
* Comfortable standing for extended periods
* Manual dexterity for precise cutting and handling of equipment
Technical Skills
* Proficient knife skills and knowledge of butchery techniques
* Understanding of HACCP and GMP food safety standards
* Experience operating vacuum tumblers and commercial food processing equipment
