Carrington is a not-for-profit centre of excellence for retirees and has been providing state-of-the-art services and accommodation for independent living, residential care, and community care since 1889. Located in the historic village of Camden, Carrington is situated on 400 acres with an idyllic garden and bushland setting, with sweeping views over the Camden Valley.
THE OPPORTUNITY
As the Sous chef you will demonstrate your talent for modern cuisine, running a fast-paced large volume kitchen catering to 450 residents 7 days a week, as well as occasional onsite events and supporting our onsite restaurant. You will support and work closely with the Kitchen Operations Manager and kitchen team driving & motivating the Main kitchen operations and your team to success. You will ensure that high standards of customer service and satisfaction are being met and service delivery complies with aged care standards, legislation, Carrington's policies, and allocated budgets. This full-time role is located onsite, working a mix of 6:00am-2:30pm and 8:30am-5:00pm shifts, including working alternate weekends and some public holidays.
Responsibilities:
* Ensuring all food items are prepared to Carrington standards, and creative seasonal menus are developed in accordance with nutritional needs and preferences
* Assisting Kitchen Operations Manager in overseeing the daily operations of Main kitchen, including stocktake and inventory management
* Supervising main kitchen team ensuring clear communication, mentoring, providing feedback for performance reviews, supporting team training needs, etc.
* Supporting the Kitchen Operations manager in building and maintaining a strong, cohesive team culture that values accountability, collaboration, and continuous improvement.
* Stepping up as Kitchen Manager during periods of leave
* Championing a resident-first approach to service delivery, handling feedback and ensuring the highest levels of satisfaction across services.
ABOUT YOU
Essential Criteria
1. Minimum of 3 years' commercial kitchen experience as Sous Chef – Aged Care, Hotels or Clubs.
2. Diploma or Cert III in Commercial Cookery or equivalent and Food Safety Supervisor Certificate.
3. Strong functions or Banqueting skills with experience in catering to large events
4. Experience supervising teams, including the ability to motivate, develop and direct your team as they work.
5. Innovative & creative ideas for planning nutritional & appetising menus
6. Strong communication and interpersonal skills – written & verbal
7. Commitment to highest standards of food safety and adhering to all our company compliances
8. Demonstrated experience implementing WHS, food safety, and infection control standards.
9. Proficiency in Microsoft Office & computer literacy
10. Completion of a pre-employment assessment and a National Criminal History check clearance during recruitment process.
Desirable
* Sound knowledge of IDDSI standards, texture modified foods, thickened fluid and other dietary requirements
* Displayed ability to interpret and manage costings and budgets
