About the Butcher role
* Requires: experience with breaking down carcasses, portion cuts, trim and prepare to specification.
* Salary guide: $30 to $40 per hour.
* Location: South-eastern suburbs of Victoria.
What the Retail Butcher will do each day They are a 7 days a week retail butchery, so weekend work is required on a roster. The roster usually remains set (doesn't change from week to week) and you'll get two days off in a row.
* Operating in the cold room preparing whole carcasses and large cuts of beef, lamb, and pork.
* Skilled use of knives, saws, grinders, and mincers to bone, trim, slice, and portion meat to specifications.
* Producing quality value-added products such as sausages, schnitzels, kebabs, and pre-packed items.
* Maintaining enticing display presentations by rotating product, refreshing shelves, labeling with accurate pricing and allergen info.
* Checking deliveries, proper storage, and stock rotation ensuring FIFO methods and temperature monitoring.
* Serving customers with expert advice on cuts, cooking suggestions, and custom orders.
* Contributing to general shop duties including cleaning equipment and prep areas while upholding strict food safety and hygiene standards.
* Delivering consistent, precise butchery craftsmanship with pride in presentation and hygiene.
