Job Description:
Mercure Sunshine Coast Kawana Waters hotel is a full-service establishment with 81 rooms, multiple function spaces, and both a restaurant and bar. The hotel operates 24/7 and primarily caters to corporate and hospital guests, as well as groups and leisure travelers.
Located in the heart of the Sunshine Coast, next to the Sunshine Coast University Hospitals, this property is owned by the National Rugby League and managed by a leading hospitality management company.

This role will report directly to the General Manager and be responsible for coordinating and managing daily restaurant, bar, and event services.
The responsibilities include:
* Drive the service of food and beverage within the restaurant, bar, and conferencing areas while minimizing costs;
* Contribute to Food & Beverage strategies;
* Assist Team Members during service hours;
* Implement efficient staffing procedures to meet financial and service quality targets;
* Lead the team through effective leadership and maintain strong team morale and training procedures;
* Collaborate with the kitchen and management to deliver high-quality service, presentation, and customer satisfaction;
* Prepare monthly reports on key performance indicators and implement corrective actions;
* Forecast weekly and monthly revenues for the restaurant, bar, and conference areas;
* Manage rosters, controlling wage costs while ensuring excellent guest service;
* Ensure all team members have extensive knowledge of menu items and products;
* Resolve customer complaints effectively, addressing feedback promptly and providing solutions;
* Maintain cleanliness and organization of outlets and workspaces; and
* Promote the hotel as an ambassador.
