Bundaberg RSL, is seeking a dedicated Sous Chef to work alongside the Head Chef, ensuring the smooth operation of the kitchen, high-quality food preparation, and excellent service standards. This role is crucial in maintaining kitchen efficiency, fostering a positive team culture, and delivering an exceptional dining experience for members and guests.
As a Sous Chef, you will assist with menu planning, food production, staff training, stock control, and compliance with food safety regulations. You will play a key role in leading kitchen operations in the Head Chef's absence while ensuring consistency and quality in every dish.

Key Responsibilities:
* Support the Head Chef in managing kitchen operations, ensuring smooth workflow and high service standards.
* Oversee food production to ensure consistency in taste, presentation, and portioning.
Contribute to menu creation and innovation, incorporating seasonal ingredients and customer feedback.
* Mentor and train kitchen staff, ensuring a positive and productive team environment.
Monitor inventory levels, place orders, and minimize food waste through efficient stock rotation.
* Ensure all food safety, hygiene, and WH&S regulations are followed.
Work closely with the front-of-house and operations teams to enhance service delivery.
* Maintain current Food Safety Supervisor certification to ensure compliance with all food safety standards and regulations.
* Assist with kitchen performance reporting and documentation of compliance procedures.
What They Are Looking For:
* Minimum 2 years' experience as a Sous Chef or in a similar senior kitchen role
* Formal culinary training – Diploma or Trade Certificate in Commercial Cookery
* Strong leadership and team management skills
* Expert knowledge of food preparation, menu planning, and presentation
* Ability to work in a fast-paced, high-pressure environment
* Excellent communication and problem-solving skills
* Availability to work a rotating roster, including weekends, evenings, and public holidays
Desirable Skills:
Experience in cost control and budgeting
Knowledge of modern Australian cuisine trends
First Aid & CPR certification
