SOUS CHEF – Pool Terrace Restaurant, Reef View Hotel

Hamilton Island is seeking a talented and driven Sous Chef to support the leadership of the Pool Terrace Restaurant kitchen team. Located at the Reef View Hotel, this vibrant, family-friendly venue offers modern Australian cuisine for breakfast, lunch, and dinner in a relaxed poolside setting with sweeping views of Catseye Beach.

Your Role

As Sous Chef, you'll work closely with the Head Chef to oversee the daily operation of the Pool Terrace kitchen. You'll support a team of up to 20 chefs across high-volume breakfast, lunch, and dinner services, while helping to develop menus and uphold the highest standards of food quality, presentation, and hygiene.


Where you'll make an impact

* Supervise day-to-day kitchen operations and lead services when required
* Support buffet breakfast, à la carte lunch and dinner, and in-room dining
* Assist with seasonal menu development and daily specials
* Train and mentor junior chefs and kitchen team members
* Maintain consistency in food quality and portion control
* Manage stock levels, ordering, and cost control
* Support compliance with hygiene, safety, and WH&S protocols
* Collaborate with management to uphold guest service excellence


What we're looking for

You are a hands-on and creative culinary professional who thrives in a fast-paced, high-volume environment. You're team-focused, solutions-driven, and passionate about modern Australian cuisine.


To be successful, you will need:

* Certificate III in Commercial Cookery (Essential)
* Current Food Safety Supervisor Certificate (Essential)
* Minimum 2–3 years' experience in a Senior CDP or Sous Chef role
* Experience in hotel, resort, cruise ship or high-volume kitchen environments
* Proven leadership, organisational and time management skills
* Ability to inspire and guide a large kitchen team
* Strong understanding of food safety, WH&S, and compliance
* High personal presentation and communication standards
* Proficiency in Microsoft Word, Excel or equivalent systems
