The Culinary Team Lead is a critical member of the kitchen team responsible for overseeing a specific section and ensuring the delivery of high-quality dishes.
Key Responsibilities:
* Prepare and present menu items with variety and flair, adhering to quality standards.
* Lead the preparation and execution of pastries, desserts, and baked goods in line with the culinary vision.
* Assist in menu development, bringing creativity and innovation to pastry offerings.
* Maintain consistency and excellence in presentation, taste, and texture.
* Ensure mise en place is prepared as required and stored correctly.
* Verify that all cooked and pre-cooked foods are properly stored and maintained.
* Advise senior chefs when stock levels are low, ensuring necessary reorder according to business demands.
* Liaise with the Food and Beverage team regarding menu item availability, additions, and relevant changes.
* Maintain cleanliness and organization in working areas and equipment.
* Be familiar with other kitchen areas to provide assistance when needed.
* Implement strict stock rotation and minimize wastage.
* Adhere to food safety standards and maintain accurate daily record-keeping.
Requirements:
* Demonstrated experience in leading a commercial or restaurant kitchen team.
* A strong working knowledge of HACCP and food handling requirements.
* Previous exposure to high-volume restaurants or event spaces.
* Ability to work various shifts, including evenings, weekends, and public holidays.
