LEFL is currently seeking a highly skilled and experienced chef who is ready to work with our current head chef to assist in leading the culinary team that is the go-to destination for everything seafood in Lakes Entrance and its surrounding areas.

Your key responsibilities will include:
* assist in leading and managing the kitchen team
* assist in developing and maintaining a menu featuring a variety of seafood dishes.
* assist in planning and executing food preparation activities including portion control, cooking methods, and plating techniques
* ensuring compliance with food safety and sanitation standards
* managing inventory and stock levels, and coordinate with suppliers
* monitoring food costs, minimise waste, and optimise kitchen efficiency
* collaborating with the management team to create and update menus, incorporating seasonal and local ingredients
* training and mentoring kitchen staff on culinary techniques, food safety practices and kitchen procedures
* staying updated on industry trends and new cooking techniques
* introducing innovative ideas to enhance the menu offerings
* handling customer feedback and concerns with professionalism
* consistently delivering exceptional dining experiences.
Key Selection Criteria
* Proven experience as a Chef or in a senior culinary role.
* Extensive knowledge of preparation, cooking techniques, and flavor combinations.
* Strong leadership skills, with the ability to inspire and motivate a team in a fast-paced environment.
* Excellent culinary creativity and ability to develop unique and enticing seafood dishes.
* In-depth understanding of local council food safety and PrimeSafe regulations.
* Ability to manage inventory effectively, control costs, and maintain high standards of food quality.
* Strong organisational and time management skills, with the ability to work under pressure and meet deadlines.
* Excellent communication and interpersonal skills, with the ability to collaborate with team members and interact with customers.
* Flexibility to work evenings, weekends and holidays, as required.
