Fire, wood and charcoal are at the heart of Poetica.
Along one side of our 120-seat, light-filled dining room sits an impressive 700-bottle wine wall, glass-fronted dry-ageing cabinets, and a 15-metre-long open kitchen featuring aJosper charcoal oven and custom wood-burning hearth.

The Opportunity
We are seeking an experienced and drivenSous Chefto support the Head Chef in the day-to-day running of the Poetica kitchen.
This is an opportunity to play a key leadership role in a highly regarded venue, working with premium produce, live fire cooking, and a passionate, dedicated team.
Reporting to the Head Chef, you will be responsible for facilitating smooth kitchen operations, maintaining the highest food quality and consistency, and ensuring compliance with all hygiene and safety standards, while fostering a high-performance and collaborative team culture.
Responsibilities
Support the Head Chef in the development and execution of seasonal menus
Maintain and refine kitchen service standards to ensure efficiency and consistency
Manage COGS, stock ordering, and kitchen wages to support profitability
Lead and inspire the kitchen team, setting behavioural and performance benchmarks
Manage supplier relationships and product quality control
Oversee food preparation and service to ensure dishes consistently meet Poetica's standards
Train, mentor and develop junior chefs and kitchen staff
Ensure all WH&S, food safety and hygiene standards are followed at all times
Experience & Qualifications
Proven experience in a Sous Chef or senior leadership role within high-end or fine dining restaurants
Experience in Hatted or Michelin-recognised venues preferred
Experience working with live fire, charcoal grills or wood-fired cooking is highly regarded
Strong leadership skills with a focus on team development
Previous experience in opening or scaling premium venues is beneficial
A strong commitment to personal and professional growth
