The Coast Restaurant. Role: Suitable candidate is expected to perform the following duties that include but are not limited to: Season and cook food according to recipes or personal judgement and experience Observe and test foods to determine if they have been cooked sufficiently Weigh, measure, and mix ingredients according to recipes or personal judgement, using various kitchen utensils and equipment Portion, arrange and garnish food. Carve and trim meats such as beef, pork and lamb for hot or cold service
Making dessert and arrange to serve Bake, roast, boil and steam meats, fish, vegetables and other foods Wash, cut, peel and seed fruits and vegetables to prepare them for consumption Regulate temperature of ovens, broilers, grills and roasters Estimate expected food consumption, then requisition or purchase supplies or procure food from storage Assist in determining production schedules and staff requirements necessary to ensure timely delivery of services Assist in analysing recipes to assign prices to menu items, based on food, labour and supplies Direct and supervise kitchen staff and apprentices Check the quality of raw and cooked food products to ensure that standards are met Check the quantity and quality of received products Estimate amounts and costs of required supplies, such as food and ingredients Prepare and cook foods of all types either on regular basis or for special guests or functions including special dietary requirements Monitor sanitation practices to ensure that employees follow standards and regulations Inspect supplies, equipment and work areas to ensure conformance to established standards Demonstrate new cooking techniques and equipment to staff Skills/Experience: Qualification of at least CIII in Commercial Cookery or equivalent. Additional higher relevant trade qualifications will be a plus Minimum 4 years of skilled work experience Precision plating skills Strong attention and an eye for detail. Passion for gastronomy and contemporary cuisine A passionate team player with a personable nature.
