Hamilton Island is seeking passionate and talented Chefs to join the culinary team at Catseye Pool Club, a premium seafood-focused venue within our new boutique hotel, The Sundays. Created in partnership with renowned chefs Josh and Julie Niland of Sydney’s acclaimed three‑hat restaurant Saint Peter, this is a once‑in‑a‑career opportunity to learn and grow under industry pioneers while living in tropical paradise.

Your Role

You’ll play a key role in creating unforgettable dining experiences for our guests. You will also support the daily operations of the Catseye Pool Club kitchen, assisting in the preparation and service of seafood‑focused dishes that reflect the Nilands' innovative and sustainable culinary philosophy. You'll work across various sections of the kitchen, refine your skills, and contribute to delivering consistently exceptional dining experiences.

Where You’ll Make an Impact

- Prepare and cook seafood and supporting dishes under guidance from senior chefs
- Uphold high standards in food quality, presentation, and sustainability
- Work across kitchen stations including grill, cold larder, and fish prep
- Maintain food hygiene, storage, and safety protocols at all times
- Contribute to prep for daily service and special event menus
- Participate in team meetings, briefings, and kitchen handovers

What We’re Looking For

You are a passionate and reliable kitchen professional, eager to build your skills in a supportive and world‑class environment. You are detail‑oriented, thrive in a fast‑paced setting, and are genuinely excited about seafood and sustainability.

To Be Successful, You Will Need:

- Certificate III in Commercial Cookery (minimum)
- Relevant experience in a commercial kitchen
- Solid organisational and communication skills
- A proactive attitude and passion for culinary innovation
- Valid working rights in Australia (minimum 6 months)
- Open Australian driver licence (manual preferred for some roles)
- Positive attitude and strong work ethic
