Head Distiller – Nosferatu Distillery

Nosferatu Distillery crafts a delightfully noir range of small-batch spirits. Reverse-engineered for food pairing, our gins and liqueurs are designed to elevate meals from entrée through to dessert and beyond. Our Bowen Hills distillery doubles as a cellar door and bar, inviting guests behind the scenes for an authentic craft experience.
We're looking for a skilled Head Distiller to lead day-to-day production and help shape what's next.
This is a full-time, hands-on role based at our Bowen Hills (Brisbane) distillery and cellar door.
Your Role
As Head Distiller, you'll be responsible for the full production of our existing range (including vodka, gin, liqueurs, whiskey and bottled cocktails), while also driving new product development. You'll manage stock levels, forecast demand, and bring our flavour-first vision to life.
Key Responsibilities
* Lead all aspects of spirit production, from raw ingredients to finished product.
* Oversee maceration, distillation, blending, proofing, and bottling across the product range.
* Develop and refine recipes in line with brand identity — balancing creativity and consistency.
* Maintain accurate batch records and production documentation (excel).
* Producing and analysing reports on product and event sales, monthly excise reports (excel).
* Manage forward production planning and inventory across wholesale, online, and cellar door channels.
* Drive R&D and design new products from concept to shelf.
* Book, pack for, and represent the brand at offsite events like markets and gin festivals (occasional weekends and some travel).
* Ensure compliance with all licensing and regulatory requirements (excise, food safety, WHS, fire safety, hazardous areas).
* Schedule and supervise casual staff as needed (bottling, events or additional production).
* Collaborate with the venue manager to ensure a seamless link between production and the customer experience.
About You
* Experience in craft distilling preferred, but brewing or winemaking backgrounds also considered.
* Solid understanding of spirit production processes and quality control.
* Confident managing inventory and production timelines.
* Personable and comfortable representing the brand at tastings and events.
* Physically capable and able to work independently.
* Forklift licence (or willingness to obtain).
* Responsible Service of Alcohol (or willingness to obtain).
* Food Safety Supervisor (or willingness to obtain).
Highly Desirable
* Formal qualifications or experience in brewing, winemaking, or distilling.
