Job Title: Culinary Specialist
Description:
We are seeking an experienced culinary specialist with expertise in Hyderabadi cuisine to join our team. The culinary specialist will report directly to the chef and take charge of kitchen operations, ensuring authenticity, consistency, and excellence in delivering traditional and innovative Hyderabadi dishes.
Key Responsibilities:
* Culinary Expertise: Inspect ingredients and liaise with suppliers to ensure fresh, high-quality, and authentic Hyderabadi foodstuffs
* Cooking Techniques: Regulate and monitor ovens, grills, and other equipment to maintain precise temperatures during cooking
* Dish Preparation: Assist in planning, preparing, and cooking a variety of Hyderabadi dishes such as Biryani, Haleem, Kebabs, and Qubani ka Meetha
* Flavour Enhancement: Season and adjust flavours during cooking through spice blending and marination to preserve authenticity and meet customer preferences
* Presentation: Portion and plate dishes with gravies, sauces, and garnishes to meet restaurant quality standards
* Food Safety: Store food items in temperature-controlled facilities and maintain proper hygiene documentation
* Menu Planning: Adapt traditional recipes to meet customer dietary requirements while following food safety and OH&S standards
* Training and Development: Support menu planning and estimate food and stock requirements for daily operations and special events
* Kitchen Management: Train and guide junior kitchen staff in Hyderabadi culinary techniques, presentation, and safe kitchen practices
Qualifications:
* Culinary Experience: Minimum 1-2 years of experience as a cook
* Certification: Certificate IV in Kitchen Management (or equivalent)
* Culinary Knowledge: In-depth knowledge of Hyderabadi culinary traditions and ingredients
* Leadership Skills: Strong leadership abilities and excellent communication skills
