About Tillbrook Melaleuka Group (TMG) – Join a team where passion meets produce.
Tillbrook Melaleuka Group (TMG) is a proud Western Australian family-owned enterprise committed to a true farm-to-table experience. Our diverse operations span from cattle breeding and farming to meat processing, retail, and nine vibrant hospitality venues.
We are dedicated to our people, our culture, and delivering exceptional hospitality. When you join TMG, you're not just starting a job; you're becoming part of a focused, dynamic family committed to growth and excellence.
The Role: Elevate the Experience
We are seeking a high-performing, high-energy Service & Training Manager with the elite hospitality pedigree required to lead a multi-venue precinct of nearly 200 staff. This role requires a true hospitality heavyweight, someone whose technical skills are as sharp as their leadership style, and who understands that an exceptional guest experience starts with exceptional staff development and culture.
Situated in Piara Waters, the C.Y. O'Connor Precinct is a premier hospitality destination featuring five distinct venue concepts, from our high-volume bustling pub and seasonal cocktail bar, to our signature steakhouse. We're looking for a Training & Service Manager who leads by example. Reporting to the Precinct Manager, you'll be the technical engine of our service standards, balancing high-speed operational command with a genuine passion for mentoring a large, diverse team. If you have a track record of boosting performance through elite training and sharp financial oversight, we want you on our leadership team.
Your Key Responsibilities
Leadership & Culture
Partner with the Precinct Manager and Operations team to translate precinct-wide strategy into floor-level excellence.
Lead and mentor staff within the precinct to foster a high-performance, accountable culture across all venues.
Act as the primary authority on service and compliance, setting the operational pace by leading from the front.
Training & Development
Drive continuous improvement through upskilling in product knowledge, technical service, and beverage mastery.
Train and empower staff to uphold TMG quality and award-winning service benchmarks.
Ensure the team complies with RSA, licensing, and WHS regulations through structured onboarding and oversight.
Customer Experience & Standards
Direct floor operations to ensure every guest interaction reflects premium hospitality and a "warm welcome" ethos.
Maintain flawless venue presentation and drive uniform service standards across all five distinct concepts.
Ensure a frictionless guest journey by mastering FOH systems (POS/Reporting) and optimising service flow.
Work alongside the Venue Manager to execute strategic rostering and strict wage controls to balance labor costs with service requirements.
Take ownership of stock accuracy, inventory, and waste management to safeguard precinct profitability.
Monitor departmental performance to ensure all hospitality functions meet financial and growth targets.
What You'll Bring to the Team
Extensive experience managing high-volume, multi-concept venues with the "technical mastery" to lead a diverse, premium hospitality precinct.
A proven track record of mentoring and upskilling large teams, fostering a culture of accountability, internal growth, and service excellence.
Proficiency in driving profitability through sophisticated labor-control strategies, COGS optimisation, and P&L management.
A passion for "award-winning" service and the grit to maintain impeccable standards and venue presentation during high-pressure peak periods.
Expert knowledge of RSA, licensing, and WHS protocols, paired with the ability to leverage POS and inventory data for precise reporting.
A proactive, solution-oriented mindset with the organisational skill to manage multiple departments and complex service functions simultaneously.
