The Alma Hotel is a vibrant and well‐established hospitality venue in Willunga, offering a contemporary Australian menu that celebrates bold flavours, quality local produce, and creative culinary techniques. Our food philosophy blends seasonal ingredients with modern interpretation — from classic bistro favourites and elevated pub meals to fresh market salads, house‐made pasta, seafood, grilled mains, and crowd‐pleasing desserts.
We are seeking an enthusiastic Chef to lead food preparation and support menu innovation while upholding the high standards our guests have come to expect.
Key Responsibilities
* Design and refine seasonal menus that align with The Alma Hotel's style — including share boards, vegetarian options, daily specials, and signature mains — while reflecting market trends and guest preferences.
* Estimate food and labour costs, manage kitchen budgets, control waste, and source high‐quality ingredients at competitive prices to support profitability.
* Order, receive, and manage inventory of fresh and dry goods; ensure all ingredients are stored correctly, rotated efficiently, and used before expiry.
* Prepare and cook dishes from our diverse menu — including grilled meats, seafood, pasta, wood‐fired specials, sides, sauces, and desserts — to exacting standards of taste, texture, and presentation.
* Monitor food quality at all stages — from preparation to final plating — ensuring consistency, portion control, and adherence to recipe standards.
* Communicate closely with the Front‐of‐House Manager, kitchen staff, and service team to coordinate service flow, resolve culinary issues, and ensure seamless guest experiences.
* Demonstrate culinary techniques, train kitchen staff (including apprentices), provide guidance on cooking procedures, and help build team skills.
* Enforce strict hygiene and sanitation protocols, maintain HACCP compliance, and ensure all kitchen operations meet food safety legislation and policies.
* Oversee food prep stations, supervise freezing/preserving methods for off‐peak use, and ensure all prepared foods maintain peak freshness.
* Create enticing daily specials, chef's features, and seasonal tasting items that set The Alma Hotel apart from other dining venues.
* Assist with planning and delivery of food for functions, private dining, and special events hosted at the venue.
* Maintain a clean, organised, and safe kitchen space; ensure all WHS practices are followed, and equipment is properly used and stored.
* Review guest feedback in coordination with management and implement improvements to dishes, service flow, and kitchen standards.
* Lead effective kitchen operations during lunch and dinner rushes — ensuring timely delivery of quality dishes without compromising standards.
Qualifications• Certificate III or IV in Commercial Cookery or equivalent.
Skills & Other Requirements
* Minimum 1 year experience as a Chef in a respected restaurant, hotel, or bistro environment.
* Proven track record of menu planning, food preparation, and kitchen leadership.
* Experience with menu items similar to The Alma Hotel's offerings — including grilled, shared, and seasonal cuisine.
* Strong knowledge of food safety, hygiene, and WHS requirements.
* Ability to work under pressure in a busy kitchen while maintaining quality.
* Excellent organisational and time‐management skills.
* Strong leadership, communication, and team‐building abilities.
* Creativity in recipe development and presentation.
