Full-Time Chef – Japanese Cuisine
Location: Sono Japanese Restaurant, Portside Wharf, Hamilton QLD

Salary Range: $68,000 – $80,000 per annum + superannuation (negotiable based on experience)
Sono Administration Pty Ltd is currently seeking a talented and experienced Full-Time Chef to join our award-winning team at Sono Japanese Restaurant, Brisbane's premier destination for modern Japanese dining located along the beautiful Brisbane River.
About the Role:
We are looking for a highly motivated and qualified chef with a passion for Japanese cuisine. The ideal candidate will have a minimum of 2–3 years' relevant experience and demonstrate a strong understanding of traditional Japanese techniques, particularly in sushi and sashimi preparation.
Key Responsibilities:
* Assist in daily food preparation and carry out duties as directed by the Executive Chef
* Prepare appropriate food quantities for daily service
* Support production across all kitchen sections, including teppanyaki and sushi counter
* Ensure high standards of food safety and consistent food quality
* Follow recipes and instructions to maintain consistency and efficiency
* Stay up-to-date with new cooking techniques, ingredients, and presentations
* Monitor cleanliness, food wastage, and assist in cost control
* Collaborate with the Executive Chef and Restaurant Manager on daily service needs and special events
* Contribute to menu development and creation of unique, inspiring dishes
Requirements:
* Certificate IV in Commercial Cookery (mandatory)
* Minimum 2 years of proven experience in a similar role within a Japanese or fine dining kitchen
* Experience in sushi, sashimi, and Japanese culinary techniques is essential
* Ability to lead a section of the kitchen independently
* Excellent communication skills (both verbal and written)
* Professional presentation and high standards of hygiene
* Flexibility to work across day and night shifts, including weekends
* Full working rights in Australia
