We are currently seeking a passionate and experienced Chef who excels in delivering authentic Indian cuisine to join us as a Tandoor Chef in a full time role working 38 hours a week.
Duties and Responsibilities
Prepare and cook a wide range of authentic Indian tandoor dishes, ensuring consistency in taste, quality, and presentation.
Prepare marinades, spice mixes, and flavouring blends in accordance with traditional Indian recipes.
Operate, monitor, and maintain the tandoor at appropriate temperatures to cook meats, breads, and vegetables efficiently and safely.
Weigh, measure, and mix ingredients for tandoori marinades, doughs, spice blends, and sauces.
Monitor and adjust cooking temperatures of the tandoor and other kitchen equipment to ensure consistent cooking results.
Ensure proper storage of raw materials, marinated items, and prepared foods using FIFO stock rotation and safe food-handling practices.
Prepare dishes according to special dietary requirements including vegetarian, vegan, gluten-free, and allergen-sensitive options.
Inspect the freshness, quality, and suitability of ingredients before and during food preparation.
Present, garnish, and plate dishes attractively, maintaining authentic Indian presentation standards.
Assist and support kitchen staff during service, and supervise or train junior kitchen team members as required.
Assist in menu planning, including developing new tandoor items and seasonal offerings.
Plan and develop menus considering customer preferences, seasonality, and food cost targets.
Estimate food and labour costs, implement portion control, and manage wastage to maintain food-cost efficiency.
Monitor stock levels, maintain inventory records, and order ingredients and supplies to ensure smooth kitchen operations.
Inspect delivered food supplies for quality, temperature compliance, and proper labelling.
Maintain a clean, organised, and hygienic kitchen environment in line with Australian workplace health and food safety standards.
Manage workflow, prioritise tasks, and oversee food production to ensure timely service delivery.
Coordinate with other staff to ensure timely and accurate service during peak hours.
Ensure all kitchen equipment, including tandoor and refrigeration units, is cleaned, maintained, and in safe working order.
Participate in ongoing recipe development, experimenting with new flavours and techniques to enhance menu offerings.
Qualifications
Applicants must hold a Certificate IV in Commercial Cookery or relevant qualification and have at least 2 years' experience in a similar role.
Salary
A salary between $76,550 - $78,000 will be offered to the successful candidate.
