Based at our South Yarra headquarters, you will expertly prepare, portion, and maintain seafood products to support our venues and ensure the highest standards of quality, hygiene, and consistency.This is a hands-on production role where you'll be responsible for butchery, portioning, and preparing seafood for a variety of menus, working closely with chefs and production staff to deliver on service demands.
The position will suit an experienced fishmonger, seafood butcher, or production chef with a background in hospitality or wholesale.Key Responsibilities Receive, inspect, butcher, fillet, and portion seafood products to the required standards Ensure consistent cuts, accurate portion control, and yield maximisation Maintain compliance with HACCP standards and food safety practices Rotate and organise stock, following FIFO procedures Collaborate with chefs and service teams to ensure the timely delivery of seafood for service Assist with training junior staff in seafood preparation techniques Maintain a clean and safe work environment, ensuring equipment and tools are cared for What You'll Bring Proven experience as a fishmonger, seafood butcher, or production butcher Strong knife skills and deep knowledge of seafood preparation techniques Background in sushi and sashimi preparation is highly regarded Understanding of HACCP, food safety, and cold-chain management Organised, detail-oriented, and able to work independently under pressure Physically fit for repetitive tasks and manual handling Strong teamwork and communication skills Why Work with Us: Our team are individuals with integrity and a passion for delivering exceptional experiences to our guests.
