We are seeking a highly skilled and experienced Pastry Sous Chef to lead our pastry team in delivering exceptional desserts for both fine dining and luxury banquets.
The ideal candidate will have at least 3-5 years of experience in pastry kitchen operations, with a proven track record of managing large teams and overseeing daily operations.
* Support the pastry team in creating plated dessert and banquet menu development, ensuring elegance and consistency in every service.
* Take the lead in working with chocolate, including tempering and artistic presentation.
* Manage, train and guide a diverse team, fostering a culture of excellence and collaboration.
* Uphold rigorous food safety, allergen management, and hygiene standards.
* Collaborate cross-functionally with Banquets and Culinary teams to deliver flawless guest experiences.
* Maintain inventory, support cost control and manage high production volumes.
* Participates in department meetings and communicates a clear and consistent message regarding the departmental goals.
Additionally, the successful candidate will have prior experience in a luxury 5-star hotel or high-end venue with large banquet operations, as well as deep technical knowledge and creativity in contemporary and classic patisserie.
They will also possess strong organizational skills, calm under pressure, with a hands-on approach to service.
Key Responsibilities

Requirements
