Job Description
We are seeking a talented and passionate Chef de Partie - Pastry to join our culinary team in Sofitel Brisbane Central. As a key member of our kitchen staff, you will be responsible for creating exquisite pastries and desserts that delight our guests and uphold our reputation for excellence.
* Prepare and present a wide range of high-quality pastries, desserts, and baked goods
* Assist in developing new menu items and refining existing recipes
* Maintain the highest standards of food safety, hygiene, and sanitation in the pastry kitchen
* Collaborate effectively with other kitchen staff to ensure smooth operations
* Manage inventory, place orders, and control costs for pastry ingredients and supplies
* Train and supervise junior pastry staff, fostering their skill development
* Collaborate with the sous chef and head chef to maintain kitchen efficiency
* Ensure consistent quality and presentation of all pastry items
* Contribute creative ideas for special events and seasonal menu changes
* Adapt to changing priorities and maintain efficiency during peak service times
* Stay current with pastry trends and techniques to continually improve our offerings.
Qualifications
* Trade Qualification in Commercial Cookery or patisserie
* Completed culinary training or apprenticeship
* Minimum of 2 years of experience as a Demi Chef or equivalent role in pastry
* Extensive knowledge of pastry techniques, recipes, and current trends
* Proven ability to create visually stunning and delicious desserts
* Excellent communication skills in English, both verbal and written
* Food safety and hygiene certification
* Strong organisational and time management skills
* Ability to work efficiently in a fast-paced, high-pressure environment
* Creativity and innovation in dessert presentation and flavor combinations
* Team-oriented mindset with a collaborative approach to kitchen operations
* Attention to detail and commitment to consistent, high-quality output
* Flexibility to work varying shifts, including weekends and holidays as needed
