Quality-driven hospitality operators are reviving a much-loved Carlton landmark butcher shop following the planned retirement and closure of its long-standing operator. This is a rare opportunity to join the reopening of an iconic business and be part of its next chapter from day one.
We are seeking a qualified butcher to work across retail and wholesale production, supporting both shop customers and supply to our hospitality venues. This role suits a skilled, reliable butcher who values craft, consistency, and teamwork within a high-quality operation.
ROLE RESPONSIBILITIES
As a Qualified Butcher, you will:
* Carry out daily butchery production across retail and wholesale channels
* Break down primals and whole cuts with attention to yield and presentation
* Prepare retail-ready cuts, portions, and value-added products
* Assist with wholesale orders and specifications for restaurant supply
* Maintain high standards of hygiene, food safety, and workplace cleanliness
* Support stock rotation, basic stock control, and prep lists
* Work collaboratively with senior staff and hospitality teams
ABOUT YOU
You will ideally have:
* Trade qualification as a butcher
* 3–7+ years' experience in a retail and/or wholesale butchery
* Strong knife skills and understanding of yield and portion control
* A genuine interest in quality meat and traditional craft
* Reliability, consistency, and pride in your work
* Ability to work well within a small, close-knit team
* Experience supplying chefs or hospitality venues (advantageous but not essential)
You are hands-on, detail-driven, and keen to be part of a respected, growing operation.
