Retail Operations Manager Sydney – Eastern Suburbs $100,000 – $120,000 Super About the Role We are seeking a hands-on Retail Operations Manager to lead a flagship Double Bay bakery while laying the foundations for future multi-site growth across NSW. This is a pivotal leadership role with oversight across front of house and back of house operations, working closely with our executive and head chefs who manage production. Initially, the role is highly operational and store-focused, evolving into a broader multi-site operations leadership position as new bakeries open. You will report directly to the Head of Retail and act as a trusted, autonomous leader on the ground in Sydney. Key Responsibilities Take full operational ownership of the Double Bay venue, acting as Store / Venue Manager in the initial phase Oversee front of house operations while maintaining strong alignment with bakery, pastry and kitchen production teams Drive operational excellence, consistency and brand standards across service, people, and systems Recruit, train and develop leaders with a strong focus on internal progression Manage rosters, labour costs, administration and operational reporting Act autonomously as the senior Sydney-based operator, supporting business growth while senior leadership is off-site Key Performance Focus Embed brand values, operational standards and leadership expectations Lead from the front, gaining deep understanding of the brand and internal operations Establish a strong leadership bench to support future multi-site growth Ideal Background & Skills Strong background in retail hospitality operations, venue management or group operations Experience overseeing both front and back of house (no requirement to be a chef or baker) Proven ability to lead large, diverse teams in fast-paced environments Highly hands-on leadership style with excellent people and communication skills Commercially minded and confident with numbers, administration, rostering and recruitment Comfortable working across multiple departments in tight, shared spaces Growth-oriented mindset with the capability to evolve into a multi-site operations role Culture & Brand Fit Values quality, consistency and community over rapid expansion Aligned with a bakery-first philosophy, focused on product integrity and customer experience Calm, positive and solutions-focused leadership style Willing to take a bottom-up approach initially to build long-term success What’s on Offer $100,000 – $120,000 Super, depending on experience Full-time role (38–40 hours) with daytime shifts only (typically 7am–4pm) High level of autonomy over scheduling and daily operations Staff benefits including 20% product discount and takeaway food Structured onboarding, including training in Melbourne and close mentorship Clear pathway to a multi-site Sydney operations leadership role
