The Trustee for Diamond Dough No 1 Trust, trading as Casa Menta, is undertaking targeted recruitment of suitably qualified, full-time Cooks and Chefs to reinforce and scale its core kitchen operations. Located on the Bundaberg waterfront, Casa Menta is a high-volume, full-service dining venue recognised for its contemporary Australian menu, premium presentation standards, and a stable, year-round customer base comprising both local patrons and tourism-driven trade.
The kitchen functions within a genuine restaurant-style operating model, delivering structured breakfast, lunch, and dinner services, supported by elevated weekend trade and pronounced seasonal peaks. The operational environment demands trade-qualified professionals capable of executing complex menus with consistency, precision, and efficiency in a fast-paced, high-pressure service setting, while also contributing to menu development, quality control, and disciplined brigade workflows.
These are permanent, full-time positions remunerated within the range of AUD 70,000 to AUD 80,000 per annum plus superannuation, benchmarked against market salary rates and commensurate with the technical skill, experience, and accountability required to sustain service standards, food safety compliance, and commercial performance in a premium hospitality operation.
Scope of the role:
* Overseeing daily kitchen operations, including staff delegation, stock rotation, and maintaining accurate records.
* Preparing and cooking a variety of dishes, either regularly or for special functions and events.
* Managing production schedules and staff requirements to ensure timely service delivery.
* Estimating food supply needs, calculating costs for ingredients, and managing orders accordingly.
* Inspecting supplies, equipment, and work areas to ensure adherence to established quality standards.
* Analysing recipes and advising prices to menu items based on food, labour, and overhead costs.
* Working closely with team members to execute established recipes and menus with consistency and precision, ensuring alignment with seasonal availability and anticipated customer volume.
* Demonstrating new cooking techniques and introducing equipment to staff for continual culinary improvement.
* Oversee workstation readiness by ensuring mise en place is complete, equipment is functional, and kitchen operations are primed for service efficiency and food quality standards.
* Prepare and cook dishes in strict compliance with food safety and health regulations, ensuring the highest quality and hygiene standards are maintained.
* Assist in onboarding, training, and supervising new team members, providing guidance and fostering a collaborative, efficient work environment.
* Monitoring and enforcing sanitation practices to ensure compliance with health and safety regulations, including Occupational Health and Safety (WHS) and HACCP.
To be considered for this role, you should:
* Be available on both days at weekends and be able to work split shifts.
* Certificates III & IV in Commercial Cookery
* Have at least 2 years of work experience as a Cook
* Ability to work in a facts paced team.
* Excellent communication skills.
