**The Opportunity**
We are seeking a motivated Retail Catering Manager for the stunning Taronga Zoo precinct.
Reporting to the General Manager, Catering, you will oversee and efficiently manage the success of all retail operations at Taronga Zoo. Ensuring that all outlets operate in a sustainable, courteous and efficient manner, this role is responsible for developing strong, reliable, and professional relationships with all staff, internal and external stakeholders. By effectively managing operations and adhering to quality standards, you play a crucial role in enhancing the visitor experience onsite and making it a welcoming experience for all.
**To ensure your success in this role, you will be**:
- Self-motivated with strong organisational and time management skills.
- Provide a strategic and optimised visual and tangible presentation of displayed food products & items
- Hands on in the operation and lead by example
- Tailoring menus and ensuring all service requirements to meet their needs and budgets, for all Retail and Taronga Zoo Special Events
- Ensuring labour is rostered efficiently, productively and to budget
- Assessing the weekly and monthly sales and maintain adequate controls to monitor budget performance
- Maintaining the high standard of food hygiene, safety and cleanliness across the site in accordance with Trippas White Group, Taronga Zoo and statutory requirements
- Knowledgeable of point of sale and rostering systems.
- Knowledgeable in and understanding of market trends and competitors.
- Passionate for great quality food, beverage and service.
- Able to hold the Approved Manager for the Liquor License
- Able to provide a paid Working with Children Check.
- Able to manage stakeholders to achieve sales, operational, financial and relevant goals, ideally within a complex multi-site customer focused organisation.
- Responsible for accurate costing and pricing

- Demonstrated experience with managing financials with budget, P&Ls, revenue targets etc. across multiple locations.
- Diverse customer experience desirable.
- Relevant tertiary qualifications preferred.
